fix: use async mode for CI Postman tests

Real repository analysis takes too long in CI (>2 min), causing
timeouts. Changed tests to use async mode:

1. POST /v1/analyze: removed cache_mode=blocking
2. GET /v1/analyze/{uuid}: accept either 'incomplete' or 'complete' state
3. Reduced newman timeout to 30s (just needs API response, not analysis)
4. Reduced CI sleep back to 30s

This tests the API contract without requiring full analysis completion.
Unit tests verify actual analysis logic separately.
