fix: pin transformers<5.0.0 to avoid breaking changes (#1132)

Transformers v5.0.0 (released Jan 26, 2026) introduced breaking changes
that cause 'NameError: name nn is not defined' when importing
sentence-transformers.

Pin to v4.x until upstream fixes the import issue.
