GoReleaser: add Mac zip files; deprecate Mac tar.gz and dmg

This commit adjusts Skeema's GoReleaser configuration to add zip archives for
Mac releases of Skeema Community Edition moving forwards, in addition to the
previous tar.gz archives. For future Skeema v1 releases, both formats will be
available. Beginning with Skeema v2+, only zip format will be used for Mac
archives.

Previously, Mac builds for Skeema Community Edition used tar.gz (only), since
this was GoReleaser's default. Meanwhile, Mac builds for Skeema Premium were
provided as both zip and dmg (but no tar.gz), since these were the defaults
for the `gon` code-signing tool.

This discrepancy causes unnecessary complexity for users who switch editions,
so we're finally cleaning it up in Skeema v2 by converging on just zip format
archives for Mac builds, i.e. we plan to eventually stop providing tar.gz for
Community and ditto with dmg for Premium. For v1 though we will continue to
offer these formats.

The change in this commit won't take effect until the next release (v1.13.3),
so in the meantime we have uploaded Mac zips for all Community Edition
releases within the past three years (Skeema v1.10.0+), and updated our
installation guides to consistently use zip archives for Mac instructions.

Security note: those retroactive zip uploads are inherently missing from the
releases' checksum files, but please rest assured that these uploads from
30 Jan 2026 are legitimate. The binaries in the zip archives and tar.gz
archives are byte-for-byte identical.
