[#162] Refactor color injection logic to filter question types

- Updated the processing logic to only handle questions of type "option" and "multiple_option".
- Revised the build_color_map function to include type filtering and adjusted statistics tracking accordingly.
- Simplified the main processing loop in the Jupyter notebook to reflect the new filtering criteria.
- Ensured that existing color assignments are preserved and fallback colors are provided for unclassified labels.
