Adds code coverage reporting to web-ui-tests

Enables code coverage reporting for the web-ui-tests suite.

Configures Playwright to collect V8 coverage data when the COVERAGE environment variable is set.
Adds a new npm script to run tests with coverage enabled.
Updates the CI workflow to upload coverage reports to Coveralls.
