Update contributing and agents files (#310)

Updating the CONTRIBUTING.md file and adding an AGENTS.md one. From my experience agents would basically create horribly formatted code with a lot of dead whitespace so I've tried to insist it just runs rebar3 fmt all the time. Also, it always uses if expressions, which are incredibly rare in real erlang and case-of expressions are always preferred and more readable, I've also tried to insist on that.
