fix(Zerion): env configuration, new chain mapping and balances fix (#2863)

* feat: Zerion chain mapping service for Portfio and Positions

* fix: balances API supports non-Zerion chains; only one env var for Zerion balances enabled; tests

* fix: add directiopn param to Zerion chain cache to set correct cache fields

* fix: no default chain id when network is unknown; no mock.calls in tests; minor cleanups

* fix: handle empty string in the chainId gracefully (trigger fallback instead of throwing an error)

* fix: remove Zerion balances check from the Balances manager to align with PR 2868; remove the corresponding test

* refactor: `toHaveBeenCalledWith` instead of `mock.calls` for assertions in Chain Mapping service

* chore: skip tests that will be deleted / adjusted in a separate Zerion PR
