fix: align subscriber queues to queue-per-event topology for all services (#778)

* embedding: consume from Service Bus 'chunks.prepared' queue\n\nAlign subscriber with queue-per-event routing and existing Service Bus queue definitions to fix amqp:client-error on receiver open.

* embedding: select subscriber queue by bus type\n\n- Azure Service Bus: consume from 'chunks.prepared' (queue-per-event)\n- RabbitMQ: keep 'embedding-service' to preserve Docker Compose setup

* embedding: align queue selection with orchestrator style\n\nIf no configured queue, auto-detect:\n- Azure Service Bus -> 'chunks.prepared'\n- RabbitMQ -> 'embedding-service'\nLogs decision like orchestrator main.py.

* align all services to auto-detect queue names by bus type\n\nAll services now auto-detect queue_name based on message_bus_type:\n- Azure Service Bus: use per-event queue (archive.ingested, json.parsed, etc.)\n- RabbitMQ: use service queue (parsing-service, chunking-service, etc.)\n\nMatches orchestrator/embedding pattern. Allows config override via queue_name parameter.

* simplify: use uniform per-event queue names everywhere\n\nRemove auto-detection logic and align Docker Compose with Azure Service Bus by using per-event queue names (archive.ingested, json.parsed, chunks.prepared, etc.) for all services and all message bus backends.\n\nSimplifies codebase while ensuring consistent behavior across environments.

- Update orchestrator config schema: remove auto-detection description
- Simplify orchestrator test coverage to reflect hardcoded queue names
- Update Azure Service Bus troubleshooting: queue lifecycle no longer creates orchestrator-service
- Revise queue architecture documentation: remove dual-topology pattern
- Update Grafana dashboard: monitor correct per-event queues (not embedding-service/orchestrator-service)
- Align all documentation with simplified unified queue naming approach
