fix: Run MCP server without --help to properly detect availability

The previous approach using --help didn't work because Click handles
--help before the MCP import check runs. Now we run the server command
briefly (with 2s timeout) and check if it reports "not installed" or
if it times out (meaning it started waiting for connections).
