fix: use latest date for Date field in results when data is sorted latest-first

Fixed Date field extraction in all three locations (MenuManager, CoreFunctions, globals):
- Sort data with latest date first before extracting
- Use head(1) instead of tail(1) to get the most recent date
- Ensures Date/Time field shows Dec 31 (latest trading date) instead of older dates

This works together with the data sorting fix to ensure:
- Time field shows most recent trading date (Dec 31)
- Date field in results shows most recent date
- Scan results have correct date information
