I switched a prerelease version of sphinx-rtd-theme as it's the only
currently released version that supports sphinx 9 and I didn't want to
add a version constraint on that because otherwise it's going to stay
there for months... It's a theme, it'll be fine. If we don't do that it
reverts down to 0.5.1 which is very much not compatible with sphinx 9.

The one annoying bit is because I had to run `uv lock  -P
sphinx-rtd-theme --prerelease=allow`, the lockfile now has that option
at the top but it won't persist (i.e running `uv lock -U` does not pull
in prereleases, it'll in fact downgrade the theme back to 0.5.1)
