fix(tests): implement comprehensive PIXI mocking and fix rendering tests

- Fix AbstractRenderer update() method to create items that don't exist yet
- Add renderer preference option to GameCanvas for test WebGL override
- Create comprehensive PIXI.js mocks for headless testing:
  - MockContainer with full parent-child relationships and positioning
  - MockGraphics with drawing methods and proper dimensions
  - MockApplication with screen, canvas, renderer, and ticker support
  - MockViewport with coordinate transformation and plugin system
- Re-enable all GameCanvas tests (27 tests now passing)
- Maintain AbstractRenderer test compatibility (29 tests still passing)
- All 731 tests now passing without WebGL dependencies
