refactor(web): convert standalone functions to Server methods

eliminate standalone functions in favor of consistent Server methods.
all functionality is now accessed through the Server instance, providing
better encapsulation and a more idiomatic Go API.

- convert parseTemplates, createTables to Server methods
- convert getViewMode, getTheme to Server methods
- convert template helpers (humanTime, humanDuration, timeUntil, truncate) to Server methods
- update all callers to use the new method syntax
- update tests to use Server instance for helper functions
