Implement metadata transformer for OpenCourseWare workflow (#192)

Why these changes are being introduced:
* The updated OCW mapping involve more complex transformations
than the initial draft. These changes propose using a 'metadata
transformer' class with a series of methods to derive
DSpace metadata fields from source metadata, replacing
the metadata mapping JSON file.

How this addresses that need:
* Create OpenCourseWareTransformer class in OCW workflow module
* Define class methods for each field
* Add 'metadata_transformer' attribute to workflow class, set to
OpenCourseWareTransformer
* Create test module for transformer class
* Add 'metadata_transformer' attribute to workflow class
* Simplify method for reading metadata JSON file from zip file
* Remove field methods from workflow class
* Update 'item_metadata_iter' to use transformer
* Clean up tests

Side effects of this change:
* These changes suggest a potential revisit of the codebase architecture to support
metadata transformers.
