test(bridge): Enhance `BridgeChainSchema` tests for `diamondAddress` validation

Added unit tests to verify that `diamondAddress` can be `undefined` or omitted, and that invalid formats are correctly rejected. This improves the robustness of the schema validation for bridge chains.
