fix(bridge): Ensure `diamondAddress` is present in chain retrieval

Updated the chain retrieval logic to check for the presence of `diamondAddress`. Modified the `BridgeChainSchema` to make `diamondAddress` optional, enhancing error handling for missing addresses.
