### 📣 Summary
Documented deprecated endpoints for KoboCAT and KPI `v1` endpoints in
DEPRECATION.md.


### 📖 Description
This PR adds a list of deprecated API endpoints to the DEPRECATION.md
file to help developers and integrators identify which legacy endpoints
are scheduled for removal. This serves as a reference during ongoing
deprecation and migration efforts toward the more modern KPI v2 API.
