[-] remove misleading `VOLUME /var/lib/postgresql` declaration (#780)

PostgreSQL base image already defines `VOLUME /var/lib/postgresql/data`.
Adding another volume for `/var/lib/postgresql` causes confusion and
may lead to unexpected behavior when mounting persistent data volumes.
