Ensure event signature is present in topics (#1961)

Adds new `EventTopicsSchema` and uses it in relevant schemas, removing the unnecessary casting thereafter:

- Add/use `EventTopicsSchema`.
- Remove unnecessary topic casting.
- Add/update tests accordingly.
