Add unit test helpers for new json serde (#484)

* Add unit test helpers for new json serde

fixes: https://github.com/creek-service/creek-kafka/issues/483

This involved making the `JsonSchemaStoreClient` part of the API, which mean introducing our own Schema type (to avoid exposing none-Creek types on API interfaces).

Also in this change, I've added `testBuilder()` methods to the other options types to match the one on the `JsonSerdeExtensionOptions` type.

Also added MockXXX interface types that extend injectable types, making it easier for others to implement and less likely that adding new methods causes compilation issues.
