Still work to do here, but this breaks the back of the work.

Outstanding work:
 - JSON Serde to register custom options type, which provides:
    - type overrides: https://github.com/creek-service/creek-kafka/issues/460
    - subtype info: https://github.com/creek-service/creek-kafka/issues/461
 - Instant serialisation is currently broken :https://github.com/creek-service/creek-kafka/issues/463
