Replace `contrib/haskell/examples/3rdparty:stack*` with a smaller example

These take too long to compile because the root source project is quite large and takes 3 minutes to compile even when all things are cached.  I've replaced the `stack` example source project with the much smaller `lens-family-core` source project.  This project's only dependencies are boot libraries that ship with GHC, so it effectively has no dependencies, and the project itself is tiny and quick to compile.

The following command now takes just 6 seconds to run at the `stack-run` stage:
