Simplify cloning options.

The underlying `_copy`'s options are no longer exposed. The only `clone`
available option now is `coerceBuffers` to coerce buffers' JSON
serialization into buffers.

Also rename `_copy`'s `coerceBuffers` option to a more appropriate
`coerce` since it is also used to decide coercion for logical types.
