refactor: clean up the UnidecodeMapping code

Class UnidecodeMapping was just there because I didn't understand
Mapping.mapping, which is simply a list. Replace UnidecodeMapping by [],
which it just simulated, and rely on mapping.kwargs["type"] == "unidecode"
to find and handle the unidecode special mapping.
