Replace manual MockConfig.js imports with automatic imports by jest

Rather than force the user to have to import MockConfig.js in every file that relies on network requests, if we add it as a jest setupFile, it will automatically be run/activated for every test. This way, they can just assume the network requests have been mocked and proceed to focus solely on their own test logic. Plus, since it's run before every test suite/file, any mocks that were altered by previous test suites won't affect the other test suites' mocks
