dev: Cross PHPUnit compat

We are using PHPUnit to test all the nice things.
But the PHPUnit interface changed heavily during the years
which made testing in a wide range of PHP versions very hard.
This will be solved by adding a compatibility layer
using the "rmp-up/phpunit-compat" package.

* Also phpunit-docgen has been removed due to PHP7
  and PHP8 incompatibility
