implement basic versioning with Papertrail  (#118)

* initial paper_trail install

* install and testing of paper_trail-association_tracking

* further install/testing of paper_trail-association_tracking [ci skip]

* bump Travis Rails to 6.1.1

* basic papertrail versioning functionality in place

* create PaperTrail::Version on :create for mappings

* basic placeholder whodunnit setting

* specs for papertrail versioning

* use 'versionable' instead of 'papertrailable'

* move PaperTrail defaults to engine.rb; specify version for paper_trail-association_tracking
