* Re-enable Errorprone

Following https://errorprone.info/docs/installation

This works locally as well!

(I believe the issue this didn't work before was that I hadn't removed
the old dependency on 2.2.0 in the dependencies list and it clashed with
2.5.1 as specified in annotationProcessorPaths)

* Add JDK 8 workaround

* Switch from Cobertura to Jacoco

Cobertura doesn't support java past 8:
