Use different directory as a source for index-image test (#915)

index image tests are building the bundel image from a directory with all the required files. The image name is the latest one in quai, but as the searh and replace is
very simple, the full image name is required, and so each time the image is replaced in quai, the search and replace does not happen.

To solve that, `hack/build-manifest.sh` was changed to copy the entire csv version directory to a new location, and then modify the CSV copy with a constant image name of `+IMAGE_TO_REPLACE+`. Also, the `CreatedAt` field is replaced to a constant value to ease git merges.
