Centralized setup via wrapper class (#103)

* Feature: Spokestack easy setup wrapper

This adds a `Spokestack` class that wraps setup of all Spokestack
subsystems in a central location, offering a default configuration
but retaining full customizability via access to individual
builder classes.

It also incorporates a feature from the React Native tray:
the ability to specify a function for editing ASR transcripts
before they are passed through NLU for classification.
This feature is only active if automatic classification is enabled.

In implementing this, the `SpeechConfig.useProfile()` method has
been made destructive (as originally intended); previously, two
calls to this method would result in multiple stage classes being
established for the speech pipeline, which would produce
unexpected results.
