Build: Automate the AUTHORS.txt update during releases

No longer require copy-pasting the command output to a file.
This removes one step of the release process, and also hopefully
reduces the chance of human error. It also makes the diff easier
to review by simply using git diff (or some integrated form of
that in one's IDE).
