Promote price and order estimates to Pricegraph (#1122)

This PR promotes the price and order estimates from the `Orderbook` type to the `Pricegraph` type (in line with the previous refactoring PRs #1121 and #1118).

This PR doesn't introduce any real code changes (with one notable exception - see below) and moves code from `src/orderbook.rs` to `src/api/price_estimation.rs`.

One notable exception is the introduction of the `ReducedOrderbook` type. This wrapper type just unwraps any possible `OverlapError`s as they should not be possible in a reduced orderbook.

Refactored unit tests still pass (with same values)!
