fix: bumps fosite version (#27)

Realigns the example to follow the example as laid out in `github.com/fosite` by using `compose.ComposeAll(...)`, therefore negating the requirement to mention being able to use `compose.NewOAuth2JWTStrategy(...)`

Closes #18
