chore(release): bump version to 3.0.0

Bumping the major version as the project has been "rewritten" to not use
Babel anymore. As part of this effort newer versions of Node are being
used, while Node 12+ are officially supported.

The interface has not changed, so probably won't cause issues, so
bumping major version as a precaution.
