feat(config): Add ladybug_tools installation folder to config

This commit adds a ladybug_tools_folder property to the config.folders class. This is what will be used throughout the other Python libraries to determine where everything is installed.

This commit also adds a new LegendParametersCategorized class that is capable of producing colors  in discrete categories.
