FIX: Updating version for SMAP products and fixing a problem with rounded coordinates.
* The second issue was quite nefarious.
* We take the mean along the lat and lon coordinates, but we could have taken the max, or min as well.
* The problem is there are floating point errors along the dimensions, and sometimes a compelete LAT or LON is missing from the dataset (all nan coordinates)
* With the floating point error, combine_first will add lat/lons that are very close together to the dataset, so you'll have lat = 70 and 70.000001.
* For most days, they'll have one or the other, and the other will be nan. This means when you go to interpolate, you have a high probability that the the nearest neighbor is actually a nan. blech.
* To correct this, I select the closest lat/lon coordinate in the dataset that already exists, and add new lat/lon coordinates from the first dataset that has them.
