Migrate from bitcoinjs's TransactionBuilder to Psbt

Bitcoinjs deprecated the TransactionBuilder in v5 and recommends
using the Psbt class instead. This commit upgrades the bitcoinjs
dependency to v5.1.6 and migrates to the Psbt class.
