Switch to executing tests using JUnitPlatform

This puts this project on the latest JUnit test framework that is pluggable and has lots of new features. We can migrate tests at our own pace due to the vintage-engine being included which enables old tests (and Spock tests) to continue running within modifications.

Many older JUnit 4.x based classes were ported to JUnit 5 (Jupiter) to test this process but certainly not all.

The classes that were modified generally were made to follow uniform conventions:
- Use JUnit 5 (use  @Test from org.junit.jupiter.api.Test instead of org.junit.test)
- Standarize on AssertJ assertions do to their fluent API and nice combination of Assertions and Matchers as well as the ability to extend the assertions. Also works well with Java 8+.
