Silence byte-compiler warnings

Previously we assigned to stdout and stderr without binding them,
which creates global variables. `racer--with-temp-buffers` also had
the side effect of changing the current buffer.

Instead, create the temporary buffers with explicit names, and use
explicit parameters for each symbol name.
