Refactor QueryBuilder & ScopedQueryBuilder

Added an `as()` function on `QueryBuilder` to provide the class that you want results returned as.

In doing so we can now handle less of the “magic” in the `ScopedQueryBuilder`, which will mean we run into less issues with more complex features like Pagination.
