Improve null non-key attribute PUT handling

- Use conversions for sets. This simplifies the detection of null non-key
  attribute values, and lets us apply a conversion on the way back from null
  to an array as well (see comment: should we do this?).

- Simplify the value conversion in the write path:
    - Convert directly in the regular attribute processing path
    - Don't build up an array of keys in buildCondition

- Add tests for null / empty set puts
