Ensure HydratorPluginManagerFactory can accept a null value for `$options`

Current versions of zend-servicemanager can and will send a null value
for `$options`. As such, we need the typehint to be nullable, and also
to cast the value to an empty array when null (as `AbstractPluginManager`
constructors expect an array).
