Partial decoupling of ModelMetaclass and TypeEngine

Stop registering a Model's field typedefs with the Model's
TypeEngine, and don't change the Model's python_type to itself.

These assumptions work for a 1:1 Model:Engine system, but
break down once multiple engines can load/dump a model.

It's concerning that I didn't need to adjust any unit tests :(
A good reminder to review the suite and see what's missing.
