Turn the `verdi export create` traversal flags into boolean flags (#2069)

By using simple flags for the traversal flags, e.g. `--create-reversed`
and setting the default to `True`, the user can never _unset_ it.
By changing them to boolean flags, which is accomplished by including
the boolean opposite flag separated by a slash, which `click` will
automatically convert into a flag, we can set a default value while
still allowing a user to turn it off.
