start string encoding/decoding support

- add encoding parameter to client/server classes
- if encoding is defined, client encodes unicode strings with it before
  sending, and server decodes bytes objects into unicode strings on
  receiving, before passing them to callbacks
- add tests and documentation for encoding feature
- update README.md to document encoding parameter
