[Fix #157219929] Refactor backend source code

1. Create util.js file in server root to house reusable functions
2. Move reusable response functions from validator to util.js
3. Move confimParams function to util from validator.js
4. Move email and cloudinary configs into util.js
5. Restructure validator.js to be more consize, and use best practices
