Keep coordinates attr of concatenated arrays

This commit makes sure that an update of a concatenated array
(e.g. ds.psy.create_list(name=[[‘u’, ‘v’]]) keeps the coordinates
attribute in the variable encoding. Furthermore, we changed the
newly introduced xdim, xcoord, etc. properties to the generic functions
get_dim and get_coord
