fix encoding of JSON w/r/t utf8 with POST data

we need to call ->utf8 on the JSON object prior to ->encode if our data
contains non-ASCII data otherwise the resulting string will be bad -
fortunately GoCardless catch this and reject the request

update tests to reflect above changes, including end to end test to
include some non-ASCII chars
