test: make add-one.js helper unit test a true unit test

Fixing the add-one.js unit test to be a true unit test.  Since there is also a call to addTimestamps that wasn't being mocked, it was being called and, thus, the test was not a true unit test.  Mocking out the call to addTimestamps to make it a true unit test.
