vendor: Update virtcontainers and runtime-spec vendoring

Rely on latest virtcontainers version introducing the new vendoring
of runtime-spec v1.0.0-rc5. Virtcontainers also includes new structures
for compatibility with runtime-spec structures changes between versions
1.0.0-rc4 and 1.0.0-rc5.

This patch also updates the current vendoring of the runtime to the
version 1.0.0-rc5.
